Best & Easiest Banana Loaf

Never throw over riped bananas, ever! Because they make the best banana loaf! This banana loaf recipe is very easy for an afternoon baking session or even a weekend kitchen time with family and friends! And what made it extra special, its the salted caramel chocolate chunks in it!

Preparation Time: 10 minutes l Baking Time: 50 minutes l Total Time: 60 minutes l Serving: 10 slices (or just keep the whole loaf for yourself ☺ )

Tools you need: whisk, mixing bowls, banana loaf pan, spatula, sift, knife, fork


  • 125 grams butter melted
  • 200 grams sugar
  • 2 large eggs
  • 60 ml of milk
  • 1 tsp vanilla extract
  • 3 ripe bananas
  • 250 grams flour
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup chopped salted caramel chocolate
  • Optional
  • 1 extra banana on top

Let's start baking!

  • Preheat the oven to 160˚C for a convection oven. Cover the loaf tin with baking paper or grease and flour it well.
  • Mashed the bananas well using a fork in a bowl and set aside.
  • Mix the sugar with the butter and beat well for 5 minutes and then add the eggs one at a time and mix briefly, about 30 seconds for each egg.
  • Now stir in the milk and vanilla extract. Add the flour, baking soda and salt and stir. You don't have to beat this for very long. Once it is mixed well, stop. It will only take about a minute or a minjte and a half.
  • Add the mashed bananas to your batter and fold using a spatula until well distributed. Finally add the chopped chocolate and fold.
  • Add a sliced banana (length-wise) on top of the batter.
  • Pour the batter into the ready tin and add a sliced banana (length-wise) on top of the batter.
  • Bake in the preheated oven for about 50-65 minutes or until a wooden skewer comes out dry.
  • Let it cool in the can for 10 minutes before pouring it out and allowing it to cool further. Serve with a nice scoop of vanilla ice cream if desired! Enjoy 😉
